Piccalilli was a mainstay growing up, with my parents making huge batches of it every year. I wanted to revisit this British classic & produce one with a little chilli tickle, but without vinegar. It is a great example of the difference that makes to the width of flavours & it's safe to say it elevates a cheddar sandwich or charcuterie board to dizzying new heights.
Ingredients: Cauliflower, cabbage, mooli, carrot, rapadura sugar, green bean, onion, sea salt, glutinous rice flour, red chilli, mustard powder, mustard seed, turmeric root, ginger, scotch bonnet & spices.
